Garlic Roasted Crab

This is a great dish to serve family style. The crab is messy, but the

flavor is so good everyone will be licking their fingers. Serve with rice

or noodles and fresh steamed vegetables and cold beer!

      List of Ingredients:

4 rock crab, cleaned and cracked

        1 garlic bulb, minced

        1 small yellow onion, chopped

        1/2 lb. butter, softened

        1/2 tsp. salt

        1/2 tsp. ground pepper

        1/4 tsp. groud red pepper

        1 bunch parsley, one-half chopped

        1/2 fresh lemon, sliced

      1. Place butter, salt, red pepper, black pepper, garlic and onion in a

roasting pan and place into 450 degree oven. Carefully cook until the

onion and garlic turn golden brown. Be careful not to burn it.

      2. Remove the pan from the oven and place the cleaned, cracked crab into

the pan and mix thoroughly. Make sure all of the crab is coated with sauce

      3. Place the roasting pan back in the oven at 450 degrees and cook for 10

to 15 minutes. Turn crab every 5 minutes or so. Oven temperatures vary, so

carefully watch the pan so as not to burn it. The crab should be heated

completely through and the sauce should be braised onto the shell.

      4. Remove from the oven and sprinkle chopped parsley over the crab and

toss. Transfer to serving platter and serve with parsley garnish and lemon

      slices.
