Thai Crab Cakes (2)

 

 

 

Ingredients 

 

  1lb crabmeat

  6 lime leaves, finely chopped

  1 tsp fish sauce

  a handful coriander leaves

  2 hpd tbsps mayonnaise

  2 small hot red chillies, seeded& chopped

  3 spring onions, roughly chopped

  3 oz fresh white breadcrumbs

  oil for shallow frying

 

 

 

Instructions...

  Put all the ingredients except the oil into a food processor and whizz until

  just mixed. Chill for 15 minutes or longer.

  With your hands shape the mixture into flat patties about 2" in diameter. Dust

  them with a little flour.

  Fry in shallow hot oil until crisp, about 3-4 minutes on each side.

  Serve with rice and a salad.
